Raita

I don’t think an Indian meal is complete without some sort of salad.

Raita is probably the second most easy one to do (the first being just salad, lemon juice and spices).

Here’s the one I made this last week:

• Yeo organic yoghurt
• salt
• black pepper
• lemon juice
• paprika
• cayenne
• ground roasted cumin seeds
and any or all of
• tomato
• cucumber
• red onion
• green chilli
Ideally you will want to add some fresh herbs but I didn’t have any
• mint
• coriander

Mix well together and chill before serving. (Not essential especially if it is cold anyway and everything has come out of the fridge).

Optional extras: cream if you like a richer raita, and/or sugar (yuk) if you like a sweeter one. If you don’t like it hot, cut down on the cayenne and fresh chillies.
